Scott Evans’ “Mama Lasagna”

 

This week I am joined by Scott Evans, television personality and host of the Webby Award-winning show “House Guest”. Scott has endeared himself to interviewees and audiences alike with his charm, his humor, and his sensitivity—including during his recent interview with Former Vice President Kamala Harris!

From a young age, Scott felt that he was destined to be in showbiz. During our conversation, he shares some of the experiences and lessons he had growing up in Indiana, including the tough love he receives from his dear mother.

Ingredients

1 lb ground beef

1 jar (24–26 oz) spaghetti or marinara sauce

9 lasagna noodles (regular or oven-ready)

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups cottage cheese (small curd works best) OR Ricotta (if you don’t like curds like Scott!!)

2 eggs

1 tsp Italian seasoning

Salt & pepper to taste

INSTRUCTIONS:

Cook the noodles

If using regular lasagna noodles, cook according to the package directions. Drain and set aside.

If using oven-ready noodles, skip this step.

Brown the meat

In a large skillet, cook ground beef (and sausage, if using) over medium heat until browned.

Drain excess fat.

Add the jar of sauce and stir to combine. Simmer for 5 minutes.

Mix the cheese layer

In a bowl, combine cottage cheese, egg, 1/2 cup Parmesan, and Italian seasoning.

Add a little salt and pepper to taste.

Assemble the lasagna (in a 9x13-inch baking dish):

Spread a thin layer of sauce on the bottom.

Add 3 noodles.

Spread 1/3 of the cottage cheese mixture.

Add 1/3 of the meat sauce.

Sprinkle with mozzarella.

Repeat layers (noodles → cottage cheese → sauce → mozzarella) twice more.

Top with remaining mozzarella and Parmesan.

Bake

Cover with foil (spray the underside with nonstick spray so it doesn’t stick to the cheese).

Bake at 375°F (190°C) for 30 minutes.

Remove foil and bake 15 minutes more until bubbly and golden.

Rest before serving

Let it sit for 10–15 minutes before slicing — this helps it set up.
