Kevin Kwan’s Curry Puffs

Ingredients

1 lb Ground Beef

1 Yukon Gold or Red Potato, boiled, peeled and smashed

½ Onion, diced

1 tsp canola or vegetable oil

4 hard boiled eggs, diced

2 tbs curry powder

4 oz coconut milk

1 tbs cornstarch

1 egg – beaten

1 box Pepperidge Farm Puff Pastry Dough

Salt to taste

INSTRUCTIONS

STEP 1

To make the curry puff filling, sautée the diced onion in a teaspoon of oil until it softens and

becomes translucent. Add the curry powder and ground beef and cook the meat till brown,

adding salt to taste. Add the corn starch, coconut milk, potato and hard boiled eggs and mix

together. Transfer to a bowl and let cool.

STEP 2

Roll out the puff pastry and cut into 4” diameter rounds. Fill the center of the pastry wrapper

with two tablespoons of the filling. Fold the wrapper over the filling making a half moon shape.

STEP 3

Then pinch and pleat the edges with your fingers till they are fully sealed.

STEP 4

Preheat the oven to 400 degrees farenheit, and place the curry puffs on a large baking sheet lined

with parchment paper. Place the curry puffs pleated side up, allowing for space between each

puff.

Lightly brush the egg wash over each piece and bake for 15 – 20 minutes until golden

brown.

Makes 15 – 18 curry puffs.
